Day 58: Shrimp Pasta with Tomato, Lemon and Spinach – just like in a restaurant

Another day of watching the baby sleep and doing lots of cooking.  We tried to keep Jordan and Jay full of good food, since they  are busy and not on any kind of good sleeping or eating schedule.  Big Daddio  and I went out and did some shopping and got busy cooking a nice dinner.  Steak, baked potatoes, salad (the Autumn Chopped Salad from earlier which was well received by all) and this wonderful Shrimp Lemon Spinach Pasta.  I found the recipe awhile ago and just got around to making it this week.

I found it at a blog called “Bev Cooks”.  Lots of yummy sounding recipes there – including this one:  There’s something called Mississippi Mud Brownies that I’m going to have to go back and take a serious look at.

This recipe is right up my alley.  It basically has all my favorite ingredients (see picture below),  I gathered everything up and got ready to cook.  This is one of those things that should be made right before you eat it.  I quickly thawed the shrimp and started cooking everything in a big skillet.  I really could have used a bigger pan, but this worked alright.

I think I actually made a mistake and doubled the amount of shrimp, but didn’t double the other ingredients.  I think it would be about right if I made it according to the directions for just me and Big Daddio.  But I don’t think you can ever have too much shrimp!

The recipe suggests sprinkling some parmesan cheese over the top and serving with some good bread.  I didn’t eat the bread because of my current Lenten status (no sugar, no flour), but the rest of it was very good.  And  before you start thinking – “Hey, pasta has flour” – let me assure you that I used flourless pasta.

Just kidding – I don’t think there is such a thing, is there?  I just ate a little and mostly concentrated on the shrimp. This reminds me of the time we were in a restaurant when the kids where younger.  The waitress asked if they wanted dessert and listed off several choices including flourless chocolate cake.  Brooke asked if she could have that, but wanted to know if she could get flour in hers!  Still makes me laugh after all these years.
